Apple Pancakes

Apple and cinnamon are one of the most appetizing combinations. Add to that the nutty flavour of whole wheat and a little vanilla to intensify the flavours and you've got a very delicious breakfast. But the pleasure doesn't stop there. Pour a generous amount of maple syrup over these spongy pancakes, let them soak it in and you've set the tone for the whole day:) This is a very simple recipe for busy people.

Apple Pancakes

Dry Ingredients
  • 1 cup whole wheat flour
  • 1 Tb unrefined caster sugar
  • 1 tsp ground cinnamon
  • 2 tsp baking powder
  • pinch of salt

Wet Ingredients
  • 1 cup soy milk (coconut or almond milk works great too)
  • 2 Tb sunflower oil
  • 3 Tb applesauce (I used Bramley applesauce for its sharp taste)
  • 1 tsp vanilla extract

Maple syrup to serve

Mix the dry ingredients well. Add the wet and mix to combine.
Heat a pan on medium. Depending on the quality of the pan you may need to add a few drops of oil to prevent the pancakes from sticking and browning too much.
Drop spoonfuls of batter in the pan, leaving some space between them to expand. Cook for a few seconds until the top becomes bubbly and the sides start to dry out (you can start with only one pancake to check if the heat is right; if it browns too fast, reduce the heat).
Use a spatula to flip the pancakes over and cook for a few more seconds.
Remove the pancakes on a plate and continue with the rest of the batter.
While still warm serve them with maple syrup.

  2. Hahaha I wouldn't mind that at all because in return for pancakes I'd get that awesome chocolate body scrub that you make:)) Surely you remember these pancakes from the weekly challenge we had 3 years ago on FB:)

    i use Spelt Flour and Backing Soda and a Dash of Salt and Oat Milk to make Pancakes, i simply mix dry ingredients and then slowly add the Oat Milk, they also turn out wonderfull, Spelt Flower tastes sweet and is much healthier then Wheet

  6. Thank you for the suggestion:) I've never used spelt flour but I plan to try it at some point. I've only made gluten-free pancakes lately with rice, corn and sorghum flour, and coconut milk. This is an old recipe that I wanted to share because it's very delicious. Thank you for stopping by:)
